2 tbsp oil (olive oil preferred for extra flavor)
½ cup sun-dried tomatoes (chopped)
1 cup heavy cream
1 cup vegetable broth
1 cup grated Parmesan cheese
1 tsp Italian seasoning
2–3 cups cheese tortellini
2 tbsp gluten-free flour (for thickening)
1 cup baby spinach
1 tsp Pride of India's ground basil leaves (optional, for added freshness)
Extra Parmesan, for garnish
1. Saute the Aromatics:Heat olive oil in a pan over medium heat. Add garlic, sun-dried tomatoes, onion powder, and red pepper flakes. Saute briefly until fragrant.
2. Build the Sauce Base:Stir in the gluten-free flour and give it a quick mix. Slowly pour in the vegetable broth and cream, stirring until smooth.
