Satisfy Your Sweet Tooth | Easy & Gluten-Free Chocolate Crepes You'll Love

Crepes are delicate, thin pancakes originating from France. They are incredibly versatile, serving as a delicious base for both sweet and savory dishes. Unlike traditional pancakes, they have a light, airy texture that makes them perfect for rolling or folding around a variety of fillings. Whether you're enjoying them for breakfast, brunch, as an easy dessert recipe, or even as a savory meal, they are a delightful treat that can be customized to suit any palate.

The Ideal Texture of Crepes

Ideally they should be thin and flexible, with a slightly crisp edge. This texture allows them to be easily rolled or folded without breaking while still holding their shape. Achieving this perfect texture involves using the right ingredients and technique. Crepes should be soft enough to melt in your mouth yet sturdy enough to contain the filling without tearing.

Why Use Rice Flour for Making the Crepes?

Rice flour is an excellent choice, particularly for those who are gluten-sensitive or looking for a different texture. It lends a light, tender quality, making the crepes slightly crispier than those made with wheat flour. Rice flour also absorbs moisture well, ensuring that the batter spreads thinly and cooks evenly. This results in delicious crepes with unique, delicate texture.

Ingredients

Directions

  1. Prepare the Batter:
  • First, whisk the dry ingredients together—the flour, cocoa powder, sugar, and salt—in a bowl until well combined.
  • In another bowl, whisk the milk, eggs, melted butter, and vanilla extract until smooth.
  • Gradually mix the  wet ingredients into the dry ingredients, whisking constantly until the batter is smooth and free of lumps. Let the batter rest for about 15-20 minutes to allow the rice flour to hydrate.
  1. Cook:
  • Heat a pan over medium heat and lightly grease it with butter or oil.
  • Pour about 1/4 cup of the batter onto the center of the pan and quickly swirl the pan to spread the batter evenly into a thin layer.
  • Cook the crepe for about 1-2 minutes, or until the edges start to lift and the surface is set. Carefully flip the crepe with a spatula and cook for another 1 minute, until lightly browned.
  • Repeat with the remaining batter, greasing the pan as needed.
  1. Serve:
  • Once the crepes are done, you can serve them warm with your favorite fillings such as fresh berries, whipped cream(or vegan whipped coconut cream), bananas, or a dusted powdered sugar.
  • You can also drizzle them with chocolate sauce or maple syrup for an extra indulgent treat. Enjoy!

There’s a lot more variety to try such as savory crepes , whether using white or  brown rice flour. Enjoying them with a superb turmeric latte creates a full experience and taste burst.
