4 Tbsp olive oil
9 cloves garlic crushed
14 oz can crushed tomatoes
2 Tbsp freshly grated ginger
2 TbspOrganic Coriander Ground
1 tspPink Salt
1 tspBlack Pepper Ground
4 cups water
14 oz can coconut milk
1-2 medium limes juiced
1/2 cup fresh cilantro chopped
Heat the oil.
Add the cumin seeds and cook.
Add the garlic and sauté.
Add the crushed tomatoes and then add ginger, coriander, turmeric, salt, and black pepper.
Sauté for 5 mins.
Add the water and rinsed green mung beans and simmer for 30 mins.
When the mung beans are cooked, stir in the coconut milk.
When curry boils, turn off the heat.
Stir in cilantro and lime juice.
Serve hot.
